I know that “morning” in Italian is mattina, but suddenly I just got hit with “in the morning” being “del mattino.” Could someone please explain to me why it would change genders like that? Thanks!

I think for some things you can use both. I’ve found different gender versions in a few Italian words. look at this page in word reference dictionary

The thing is different with frutto and frutta.
La frutta = is a general concept as in “La frutta fa bene” = "Fruit is healthy"
Un frutto = is a specific piece of fruit as in “Mangia questo frutto” = “Eat this piece of fruit”
