I am new here and started lately a couples of courses.
Can one as a proprietor of a course backup (download) the data of the course? I mean, if i work for the next years on a course, how can I make a backup?
Is there a limitation for the amount of levels? I just created a course and this one needs 250 Levels. Is there a restriction? I did not find further information about the maximum level size.

Memrise does not provide a means of downloading/backuping a course. Workarounds are:
1a. put your course in Excel or something else and store it on your PC. Use the bulk upload function to upload the info to Memrise. Advantage: you have your own mastercopy, and if Memrise every changes their policies, you still have your stuff. Draw back: doesn’t work for Audio, still need to add them one by one (though there is a script for that)
1b. Use Anki and a plugin called memrise2anki (or something like that). I have downloaded a course that way and it worked fine - including audio.
I’ve never noticed a limitation in the number of levels, but 250 sounds quite a lot to me.
