Is there a way to turn off just this one portion of memrise courses? So no spelling?

Do you mean that you don’t want to be prompted with the character/letter tiles displayed below the answer box? If so, you can remove them using an add-on such as “Adblock Plus” (or similar).

I don’t want the letters or the letter box. I don’t want this screen at all.
and I know nothing about add-ons.
Sorry. I misunderstood the issue. Is it a course that you are creating and you don’t want it to have typing tests, just multiple choice? If so, this may be what you are looking for:
