I went to edit the courses I added to my groups this morning (I’m a French teacher) and the edit button has disappeared! Now my students need to practice their vocabulary and they are practicing wrong because I can’t edit their lists!

If you were a contributor rather than the creator of the course, is it possible someone removed you?
I don’t think there was an edit button in Groups. There is a drop down menu to add courses and you can remove courses with the X that appears when you mouse over a course.
Maybe you mean the Edit Course button?
